Fried Chicken with Ginger Flower (Bunga Kantan)

Ingredients:

1 chicken -cut into 12-15 pieces

1 stick of ginger flower – sliced thinly

2 tsp salt mixed into 200ml of water

¾ cup of cooking oil

Pounded Ingredients:

1 tsp coriander (ketumbar)

3 pips garlic

3cm fresh turmeric (kunyit)

3cm ginger flower

Method:

1)     Sauté pounded ingredients with 2-3 tbsp of oil till fragrant.

2)     Add in chicken and stir well.

3)     Add in sliced ginger flower and stir well.

4)     Add in salt water.

5)     Simmer chicken till the gravy thickens. Dish out and keep aside.

6)     Heat oil in a wok on high heat until hot; deep-fry chicken pieces in it until golden brown.

Drain on kitchen towels and serve.
