Hainanese Style Chicken Rice

Ingredients:

1 chicken

10 slightly crushed pips of garlic

5 slightly crushed shallots

3-inch piece ginger

1 tbsp salt

4-5 tbsp cooking oil

Chicken fat (optional)

3 cups rice

1 sprig coriander, root removed

1 cucumber

1-2 tbsp fried garlic

Preparation:

  • Bring a pot of water to the boil, put in chicken and immediately switch off the heat. Soak for about 45 minutes.
  • Remove chicken from pot and soak in ice cold water for 10 minutes.
  • Cut chicken into bite sized pieces. Garnish with coriander.
  • Strain the broth for later use.
  • Wash rice and allow to soak for a while.
  • Heat oil in frying pan and add chicken fat, garlic, small onion and ginger, fry till light brown.
  • Remove garlic and small onion.
  • Add rice and fry for 3-5 minutes.
  • Transfer rice to a rice cooker, add 4½ cups chicken broth, and cook until rice is done.

Chilli Sauce:

15 red chillies, 5 chilli padi, 3 cm young ginger – pounded

1 tbsp chicken oil (scoop from the chicken stock)

2 tbsp lime juice

Dash of sesame oil or garlic oil

Mix the above ingredients, add in salt and sugar to taste.

To Serve:

Fluff up rice, press rice into a rice bowl and invert it onto a serving plate.

Garnish chicken with cucumber or tomatoes.

Serve with chilli sauce and dark soya sauce if desired.
