Springy, al dente noodles freshly rolled out and cut right in front of you, either in a fragrant ikanbilis broth flecked with leafy greens and topped with crispy ikanbilis; or if you prefer it dry, topped with a poached egg, yolk still runny, spicy chilli flakes on the side and crispy ikanbilis. Heaven in a bowl.
