Nyonya Dark Soy Sauce Chicken

Ingredients A:
- 2 Chicken Maryland or half chicken (cut into bite size)
- 2 tsp Five spice powder
- 1 tbsp Corn flour
- 1/2 tbsp Sugar
- 1/2 tsp White pepper
- 1/2 tsp Salt
Ingredients B:
- 2 Star anise
- 1 Cinnamon
- 1 tbsp Dark soy sauce
- 2 tbsp Light soya sauce
- 1 tbsp Chinese rice wine (optional)
- 1 tbsp Sugar
- 1 tbsp Oyster sauce
- 4-5 cloves Garlic
- 500ml Water
- 4 tbsp Oil
- 1/2 tbsp Sesame oil
- Marinate the chicken pieces with Ingredients A for a minimum of 1 hour before cooking.
- Heat oil in a wok, then sauté the garlic until aromatic. Add the chicken pieces, sauté for a minute, then add all of Ingredients B except the sesame oil.
- Bring to a boil and simmer chicken pieces for 25-30 minutes or until the chicken is tender and the gravy has thickened. Add in sesame oil before dishing out.
