Valentine Coconut Milk Jelly

Ingredients A :
125ml coconut water
100ml coconut cream
25g sugar
1/4 tsp salt
5g Thai agar agar powder
2 pieces Pandan leaves ( tie into knot )
Few drops of red food colouring

Ingredients B:
500ml coconut water
80g sugar
10g Thai agar agar powder
2 pieces Pandan leaves ( tie into knot )

Method:

  1. Add and whisk all the A ingredients in a pot, let stand for 5 minutes.
  2. Set the pot over medium heat, bring to a boil, dissolve all the sugar and agar powder. Allow to simmer for 2-3 minutes.
  3. Gently pour the mixture into the 3 cm rose silicone mould. Let stand for at least 30 minutes.
  4. Remove the jelly from the mould and place it in the middle of the 5 cm rose silicone mould.
  5. Add and whisk all the B ingredients in a pot, let stand for 5 minutes.
  6. Set the pot over medium heat, bring to a boil, dissolve all the sugar and agar agar powder. Allow to simmer for 2-3 minutes.
  7. Gently pour the mixture into the 5 cm rose silicone mould. When it cools, place it in the refrigerator for 1 hour.
