Ingredients:
* 200g glutinous rice
* 200ml coconut milk
* 10-15 pieces jackfruit
* 1 tsp salt
* 40g sugar
* 1/2 cup water
* 4 stalks pandan leaf
* 1 tsp toasted sesame seeds
Coconut Sauce
- In a saucepan, add 1/4 cup of water, sugar, salt, and pandan leaves.
- Bring to a boil. Add coconut milk.
- Simmer the coconut mixture until thick. Set aside
Method:
- Rinse and drain the glutinous rice, then soak it in water for 3 to 5 hours.
- In a double steamer, bring water to a boil and add 2 pandan leaves.
- Place a piece of white thin cloth or banana leaves over the upper steamer.
- Pour in the glutinous rice.
- Steam for 10 minutes over high heat. Open the lid of the steamer and stir the glutinous rice. Add in 1/2 cup of water.
- Steam for another 8-10 minutes.
- Use 1/3 of the coconut mixture to mix into the cooked glutinous rice.
- Scoop a spoonful of sticky rice and stuff it inside the jackfruit. Repeat until finished. Sprinkle with toasted sesame seeds and drizzle with sweet coconut milk dressing. Enjoy!
